Healthy Instant Pot Mediterranean Chicken Breast
Boneless, skinless thigh fillets: 20 minutes into the cooking time, add the chicken to the pan. If you follow the recipe all the way through, they will overcook.
Chicken breast: not recommended because there is a high risk of drying out and the cooking time varies a lot. It can be done though – just add chicken in the last 20 minutes of cooking.
2. Dijon mustard adds a little more flavor to the sauce and thickens it. But the dish can be prepared without it.
3. Potato size – choose a potato that is about 7.5cm wide so that when cut into quarters it is the right size for cooking. If using large potatoes, cut them into 3.5 cm cubes.
