I teamed up with Ocean Mist Farms to make this Lemony White Bean Hummus with Purple Artichokes. They sent me some of their beautiful purple artichokes that are in season right now.

I thought the artichoke hearts would pair perfectly with white bean hummus, and since I didn’t want to waste those beautiful purple leaves, I served them with hummus for dipping, along with other veggies and fresh crackers. . They make a wonderful addition to the dish!

Hummus is a Middle Eastern dip or spread. It is usually prepared from cooked and boiled chickpeas mixed with tahini (sesame paste), lemon juice, garlic and salt. It is usually garnished with olive oil, a few whole peas, parsley and paprika and served with pita for dipping.

This white bean hummus can have the same traditional ingredients as lemon, tahini, and garlic, but substitute white beans (like cannellini or navy beans) for the chicken. This is a great alternative if you are allergic to chicken!

Purple artichokes make a wonderful addition, adding their own texture and flavor to this slaw. The lemon juice brightens it up a bit, and together with the white beans, these two additions give this dish more of a Mediterranean flair.

Ethereally Smooth Hummus

I like to save chopped artichoke hearts and lemon juice for garnishing hummus. A drizzle of olive oil and a pop of fresh herbs also goes a long way in terms of presentation.

I like to serve this white bean hummus with a mix of fresh vegetables and crackers or pita chips. This would be lovely alongside warm pita or toast! Or use it as a base for the Seven Layers of Mediterranean Water!

Another way you can serve this spread as a base for your favorite protein – just add the spread to your dish to add flavor to fish, chicken or meat. Or add a scoop to a bowl of your favorite cereal for extra protein.
