Meal planning ideas help me stay organized, save time, and always have something healthy and delicious when I’m hungry. I like to spend an hour or two on the weekend preparing basic meals that I can use throughout the week. Check out my top eight cooking ideas.

Pre-washed salad greens are easy, but can be expensive. Instead, I buy a variety of beans and vegetables, cut them into salad-sized pieces, and wash them and add them to my salad. Now (don’t laugh) I put them in a pillow case and store them in the freezer. A salad bag keeps vegetables dry and a pillow case works better than plastic bags to keep them fresh and juicy. The vegetables don’t get wet this way and they keep for a week.

I pack a salad almost every day for lunch and make a salad almost every night for dinner. For convenience, I prepare several different vegetables and store them in one container in the refrigerator. My staples are small pieces of fruit, red onion and parsley, carrot juice and chopped parsley. To prepare food ahead of time, I often cut up broccoli florets or cauliflower or zucchini slices or asparagus spears in a hot oven and freeze them. These quick and easy vegetables make their way into my lunch and dinner salads throughout the week.
Cooking chicken ahead of time is a real lifesaver for me. From 1 kg of baby chicken (
), I sprinkled them with a little salt, pepper and paprika. Then I brown them on one side in olive oil in a large pan over high heat. I wipe it off, add a few tablespoons of water to the pan (white wine, vinegar, water, or lemon juice), cover the pan, and let it cook for 5-6 minutes until done. I often add it to a salad for lunch, put some in a pita bag with vegetables and hummus, or use it to make a quick soup or pasta dish.
Slow cookers are great for making homemade beans or nuts. I like to slow cook black beans with onions, garlic and spices. Once cooked, I store them in the fridge to mix into my lunch salad or use as a base for soup or chili.

Eggs are one of the best sources of protein out there, and they only take a few minutes to boil. I use hard-boiled eggs as a protein source in salads and often have one as a snack. I like to slice rice cakes with mustard and add a scrambled egg and some of my vegetables.
When I have tuna salad in the fridge, it’s much easier to include more fish in my diet. I mix tuna flakes with grilled avocado or hummus, some mustard and lots of chopped greens (again those greens are chopped first). It serves as a source of protein for my salad at lunch, or I’ll use a little bit of protein-rich food for the whole meal.
Hummus takes minutes to make and will keep fresh in the fridge for a week. It is very cheap to make, compared to the cost of the purchased product. Start with a pan of beans (garbanzos/chickpeas are traditional, but other beans work just as well). Drain the beans, rinse and drain again, then blend in a blender with a little olive oil, lemon juice, salt and pepper until smooth. Hummus and raw vegetables are great, but I also use it in place of mayonnaise in tuna or egg salad, or dilute it with a little vinegar and water for a delicious salad dressing or dip for dried vegetables.
Bottled dressings are expensive and often contain salt, sugar and preservatives. Making your own clothes is easy and allows you to control the ingredients. I mix two parts olive oil and one part acid (citrus juice, vinegar), and add salt and pepper to taste. I change the acid and often use a mixture like lemon juice and rice vinegar. You can try adding dry herbs, mustard, garlic powder or onion powder.
