All of the instructions below are categorized according to each type of lunch plan. For example, below I have some cook-in-a-pan recipes that you can spread out in meal prep bowls and reheat once you’re at work. Of course, I also have some salads, wraps and sandwiches.

I really hate traditional deli sandwiches, so I try to make chicken breast and cut it up to use in wraps or sandwiches, but every once in a while deli meats like turkey are good. Diets Don’t Work, Our Weighty Obsession Is Not Healthy

Slices are really great options for work and easier on the go than you might think! And before you think sauces don’t fill you up, think again! I’ve put together some thick soups/stews to give you some ideas of ways you can add protein to your soups. Most are also vegan/vegetarian friendly, so the soups can be very inexpensive as long as you have access to a microwave at work.

If you’re cooking ahead, these are my favorite types of healthy lunches to make! Basically, you throw everything in a pan or skillet, cook, and then divide into glass food prep bowls. Vegetarian lunch ideas are great for when you’re looking to eat lunch on a budget. Usually all you need is a can of beans or chickpeas, or some quick-cooked tofu with a great sauce and vegetables. Sometimes you can even get away with a couple of recipes where you just throw everything in a meal prep bowl or jar and call it a day!

Low-carb lunches are great options because they make you gain more weight from that lunch. Like the low carb options above, salads are definitely the go-to option for healthy lunches, but they don’t have to be boring! Be sure to mix toppings and salad dressings. I like to put my salads in mason jars when I make them for the week because you can keep the dressing and protein on the bottom and then layer the veggies. This is especially important for lettuce to make sure it’s fresh!

When I really have time to prepare ahead of time, I love to make rice bowls! Korean chicken and mango chicken are my favorites because the sauces are so good, but the burrito bowls are also very easy to put together and you can also take short cuts by using chopped veggies and sauces. purchase which is very small. I love making my lunches for the week in the Instant Pot. You can prepare all kinds of lunch-friendly recipes, such as rice bowls, stews, pasta, taco meat, etc. I personally like to make a big batch of pasta for lunch during the work week, like the Pesto Chicken Pasta linked below. it’s one pot for minimal cleanup, you can easily move it around for good cooking and reheating. Tip: add a little water on top of your pasta before microwaving it. It will help retain moisture!
