Elimination Diet Vs Food Sensitivity Test
The gold standard for food intolerance is the elimination diet. However, for most people it is difficult, tiring and sometimes confusing because the answers are not always obvious or quick. IgG (immunoglobulin G) testing is a useful guide for structuring elimination diets and conducting controlled trial and error. People with neurological, gastrointestinal and movement disorders often suffer from IgG food allergies. These people may continue to consume harmful foods without knowing their possible effects. As an immunological response, an IgE food allergy causes the release of histamine and triggers an immediate hypersensitivity reaction, with symptoms appearing within minutes or hours. In contrast, food sensitivity is a non-IgE allergy characterized by the measurement of IgG antibodies specific to antigenic food proteins. This IgG food allergy is a delayed hypersensitivity reaction, with symptoms appearing hours to days after eating the offending food. The 93 foods tested in the IgG food allergy test are able to identify problem foods in order to exclude them from the patient’s diet. According to many clinical studies, eliminating IgG-positive foods can improve symptoms of irritable bowel syndrome, autism, AD(H)D, cystic fibrosis, rheumatoid arthritis, and epilepsy.

ELISA and ALCAT are the two most common blood tests that claim to detect food intolerance. Basically, they monitor how your blood reacts when exposed to a specific food. ELISA measures something called an IgG antibody response. ALCAT measures white blood cell responses. At first glance, this sounds like a plausible theory—after all, antibodies and white blood cells are part of your immune system, and when your immune system reacts to a food, that’s an obvious indication of an intolerance, right? Not so fast! The immune system is incredibly complex. It turns out that some studies show that an IgG response to a food actually indicates tolerance, not intolerance! And white blood cells are constantly changing shape and activity anyway, so if they do this in the presence of food, it doesn’t mean that food was the trigger. Additionally, many labs test the white blood cell response to “raw” protein, such as raw chicken or raw eggs or raw beef, and not to cooked protein. So it’s no surprise that you do these tests and then end up with a depressingly long list of foods you “shouldn’t eat.”
Not surprisingly, both tests are also known for inconsistent results. Some doctors have sent two blood samples for testing on the same day from the same person for tests like ELISA and ALCAT and received completely different reports of intolerance!

The plan below is slightly different from a full elimination diet where 8+ food groups are eliminated at once. For most people, it is nearly impossible and certainly cumbersome to avoid so many foods at once. This modified version is much easier because you eliminate three or four food groups at a time for 21 days, as it takes about two to three weeks to notice a difference in symptoms.
After the first 21 days of avoiding certain foods, you should feel better. This means that if you reintroduce foods one at a time, wait at least three days before you start eating again so that you can notice any changes in how your body reacts to the food. If you add back all the food groups you removed and you have no symptoms, go to the next step in the plan where you remove the new foods. Keep doing this until a certain food group causes symptoms – that’s probably your trigger. You can then stop the diet or continue if you think more than one food is to blame.
You’ll start by eliminating the statistically most common offenders and then work your way down to the less common offenders, which should mean you find your culprit more quickly. At each step, read food labels to see if packaged goods contain ingredients you’re avoiding. These foods are hidden in a lot more things than you think! When eating out, ask the restaurant staff what is in the dishes. (For example, are vegetables cooked in butter or are peanut oil used for frying?)
You don’t have to worry about hunger because you only avoid certain foods and you can always eat plenty of fruits, vegetables and healthy fats. Vitamin deficiency is also not a problem because each phase lasts only 21 days.
