Carbs are converted to glucose in the bloodstream (so carbs are a lot of sugar as far as we’re concerned) and eating anything high in carbs will raise your blood sugar. Another problem is that some carbohydrates can turn into glucose too quickly in the bloodstream. You can see it as the red line in the image below…
Eliminating carbohydrates from the diet or severely limiting them will lower blood sugar levels, but the problem is that it puts the body into a state of ketosis, burning fat instead of glucose for energy. You may also feel lethargic.
The problem with burning fat instead of glucose is that during pregnancy, the body produces acids called ketones, which can be harmful to the growing baby if they are produced in excess.
It is therefore important to continue to eat small amounts of carbohydrates at each meal and stay well hydrated wherever possible. You can read more about ketosis on our page about ketones.

One method often used in diabetes nutrition counseling is carbohydrate counting. Here, a measured amount of carbohydrates is consumed for each meal and snack.

Type 1 diabetics use carbohydrate counts to calculate insulin doses compared to carbohydrates eaten, but because insulin resistance in gestational diabetes fluctuates with pregnancy hormones, insulin doses Can make judging difficult. This can lead to unstable blood sugar levels and other hypos.
The main reason we don’t advocate a carb count is that everyone is different in terms of which starchy complex carbohydrates they tolerate best.
