Reduce the heat to medium-low, stir, cover and simmer for 30 minutes or until the vegetables are tender. Remove the lid and mix in the spinach and lemon juice. Add the appropriate amount of salt to taste. STORAGE Store the cabbage soup in an airtight container in the refrigerator for up to 5-7 days. Freeze for up to 4-6 months. Thaw in the refrigerator and heat well.
