Did you know that cabbage soup is very popular in Polish, Slovak and Ukrainian cuisine? Also available in Czech, German, French and Swedish. My mother also used to make her soup, like this, full of vegetables.
Weight Loss Vegetable Soup
Although you can load this soup with whatever you like and add protein like chicken or beef, here is my version:
Before you start by heating the olive oil in a large pot on high heat. Mix the onion, carrot, celery, garlic, cabbage, oregano, thyme, paprika, salt and pepper to taste. Cook for about 5 to 7 minutes until the onion and cabbage are soft.
Add in chopped tomatoes and vegetable stock. I love chicken stock but if you want to keep this recipe, corn will work just as well. I use a low juicer. Bring the mixture to a boil and reduce the heat to low, cover and simmer for 30 minutes.
Garnish with parsley and serve warm! You can add a tablespoon or two of lemon juice for extra flavor if desired.
The New Cabbage Soup Diet
I like to make fresh bread, garlic bread or grilled cheese is another good option. Or just go with crackers, can’t go wrong with those.
To complete the shelf life of cooking vegetables safely and effectively, refrigerate immediately in an airtight container. When stored properly, cooked soup will last 3 to 4 days in the refrigerator.
You can freeze a meal that is perfect for taking to work for lunch. I recommend freezing in airtight containers or heavy duty plastic bags. If stored properly, this soup can be refrigerated for 2 to 3 months.
