Yes, Vegan Cabbage Soup can be frozen and stored in the refrigerator for up to 2-3 months. To freeze, let cool completely and store in freezer safe containers (affiliate link), leaving 1/2 inch space for expansion. Alternatively, freeze large portions in large freezer bags. Allow to thaw before reheating.
Reheat on low heat on stove until hot. Alternate heating in microwave at 30-second intervals, stirring after each, until heated through.

Vegetable broth vs. water: Vegetable broth will make a stronger and tastier broth, but you can use water if you want. Just make sure to season well with salt and pepper. If using water, you may want to add 1 teaspoon each of onion and garlic powder for a full soup.
Add beans: Green beans add a good dose of protein, but a can of drained white beans or 1 1/2 cups of freshly cooked beans would also be great to add to the nutritional profile.
Herbs: Instead of Italian seasoning, use 2 tbsp. Each dried oregano, basil and thyme. Herbes de provence will also work.
Add pasta: For an extra heart attack, add 8 ounces of cooked pasta such as clams, elbow, macaroni, rotini, and fusilli.

Instant Pot (6 Qt.): Add ingredients except water/oil to insert pan in your pressure cooker. Place the lid on the Instant Pot and set the release valve to the SEALED position. Press the MANUAL button and set the timer for 3 minutes. When finished, set the valve to quick release or let it release pressure on its own (takes about 20 minutes). Remove the cover. Season to taste with salt and pepper.
Slow Cooker: Add ingredients except water/oil to your crock pot. Cover with a lid. Set to HIGH for 4 – 5 hours or LOW for 8 – 10 hours. Add water if necessary. Season with salt and pepper to taste. Every ingredient in this soup has an important purpose. Olive oil acts as the base of the soup, adding a good dose of heart-healthy monounsaturated fats that help protect against cardiovascular disease and ensuring that the soup is nice and filling.
